Spring is fully under way, and I guess having a little bit of sunshine has got me feeling all rejuvenated. So I have been making juices for breakfast whenever I get the chance. A favorite recipe I came up with is this simple Energy Boosting Spinach, Kale and Mango juice. Although it is not the most filling breakfast drink, I did find that it kept me full for a couple of hours. So if you prefer, you can just have this as a morning pick me up snack.
What I love most about this juice recipe is how refreshing it is and the energy boost it gives me. When I juice I always make one that is not only healthy but delicious to taste. I am not a fan of juices I have to pinch my nose and gulp down. For these very reasons I made sure to add mangoes, strawberries and pineapple to the kale and spinach.
By adding fruit, I didn’t even notice the taste of the spinach and kale at all. As much as I love spinach for all its nutrients, I am not the type who would enjoy drinking spinach or kale juice on its own. So finding tasty fruit and including it in the juicer along with the spinach and kale is a win all round.
Mangos are great for brightening and hydrating the skin, they are also packed with antioxidants which are great for protecting and strengthening the skin’s barrier. I am a huge fan of Kale in juices as it is great for detoxing the body and it is known to promote good bone health. The Strawberries are great for adding taste to the recipe and a great source of Vitamin C to boost immunity.
You also have the option to add chia seeds which are high in Omega 3 fatty acids and a great source of protein.
1/2 cup strawberries
1/2 cup mangoes
1 cup pineapple juice
1 cup Kale
1 Cup Spinach
1tsp Chia Seeds
Place all ingredients into your blender, blend together till they turn into a smooth juice pour into cup and sprinkle chia seeds on top. Enjoy!
